Где-то читал, что любой односолодовый виски должен быть сделан строго на одной винокурне. Так ли это?

Совершенно верно. Согласно шотландскому законодательству, single malt означает только одну винокурню.
"Single Malt Scotch Whisky" means a Scotch Whisky that has been distilled in one or more batches-
(1) a single distillery;
(2) from water and malted barley without the addition of any other cereals; and
(3) in pot stills;
"Single Malt Scotch Whisky" means a Scotch Whisky that has been distilled in one or more batches-
(1) a single distillery;
(2) from water and malted barley without the addition of any other cereals; and
(3) in pot stills;
